Salted Caramel Bites

Gluten free | dairy free | refined sugar free
Everybody loves a good bliss ball. So easy to make, and a great healthy snack when on the go. I really think a good bliss ball needs a bit of flavour and texture though, so we like toasting up brown rice puffs and adding them to the mixture a little later in the blending process to give a little crunch. We use a food processor and find that pulsing the mixture a few times to break up the dates and nuts first, works best. Feel free to mix or swap the nuts and dried fruit for whatever you have on hand, but we do highly recommend these flavour combinations. Oh, and p.s - definitely dip these in our vegan dark chocolate and set in the fridge to take as a treat to your next office morning tea or dinner party.





1 + 1/2 cup almonds
1/2 cup almond meal
1 + 1/2 cup dates
1/2 cup brown rice puffs - lightly toasted under the grill
2 tbs macadamia butter
swap for almond or cashew butter
2 tbs panela/rapadura
swap for coconut sugar
1 tsp vanilla
pinch salt
desiccated coconut for rolling - option to toast the coconut before rolling














1. Place all ingredients except the brown rice puffs in food processor and pulse a few times to break up the dates and then blend on high until a fine sticky crumble.

2. Add the brown rice puffs and blend altogether until a fine crunchy texture. To test if they are sticky enough, use the back of a spoon and press the mixture into the side of the processor bowl, if mixture sticks down firm, then it is ready to roll into balls. If it is too crumbly and dry, blend some more. The finer and stickier the mixture, the easier and quicker they will roll.

3. Roll into balls with your hands. We would weigh ours out into 50g balls for snack size or do smaller 20g-25g balls for bite sized. Roll in toasted coconut and set in the fridge. Store in the fridge in an airtight container for up to 2 weeks.


R E C I P E N O T E S

- Swap out the almonds with any other raw nut, we recommend hazelnut, brazil nut, cashew or macadamia.

- Use a pure nut butter made from 100 per cent nuts to ensure you’re not getting unexpected added sugar.
