Salsa Verde


Aka green sauce. A tart & herby green sauce to top bbq vegetables, roast potatoes, tacos, grilled fish or a savoury slice like our vegetable slice.



1 handful parsley - stalks & leaves 1 handful coriander - stalks & leaves 1 handful mint leaves 3 tsp capers 2 tsp of crushed garlic or 2 garlic cloves 3 tbsp red wine vinegar 8 tbsp good quality EVOO 1/2 tsp mustard seeds or dijon mustard 1 tsp sugar or honey - optional salt & pepper


Throw all the ingredients into a nutribullet, blender or food processor and pulse a few times until just combined. Taste and season with salt and pepper. Store in an airtight container in the fridge for up to 1 week. If you don't have a blender you can finely chop the herbs, capers and garlic altogether, then pop them in a small bowl and mix in the vinegar, olive oil, mustard, sugar and seasonings.
