Raspberry & Beetroot Bircher

Vegan

Our popular and vibrant pink, vegan, raspberry bircher was absolutely adored by our customers and we will admit, it is pretty dreamy. All of the elements go together so well making this a creamy, sweet, tart, delicious bircher that seriously is addictive.
FOR THE BIRCHER (makes 4):
2 cups rolled oats
4 large green apples
1/4 beetroot

FOR THE BOWL
1/4 cup raspberries fresh *if using frozen omit the water
1 tsp maple
1 tsp water
2 tbs vanilla coconut yoghurt
1 tbs roasted macadamia butter or other roasted nut butter
2 tbs almond crumble (recipe in our other post)


BIRCHER
1. Juice the apples and beetroot with a cold-pressed juicer until you make 2x cups of juice. If you do not have a juicer, use 2 cups of store bought, cold-pressed apple juice (oats won't be pink with plain apple juice but will still taste amazing).
2. Place the oats in a container, pour over the juice and mix well. Store in an airtight container and place in the fridge for minimum 1hr, but overnight is best. Lasts in the fridge for up to 4 days.

BUILD YOUR BOWL
1. In a small saucepan stew the raspberries, maple and water on a medium to high heat and use a spoon to stir together, then reduce the heat to low and use the spoon to mash the raspberries while they simmer and the syrup reduces. If using frozen raspberries, omit the water as the ice from the raspberries will provide enough liquid.
2. Place soaked oats in a bowl, top with coconut yogurt, macadamia butter, stewed raspberries and almond crumble.

Recipe Notes
- Beetroot is sweet and vibrant, which is what colours the oats pink. You do not need to use much, we recommend just a 1/4 of a large beetroot or 1 small beetroot. Don't worry, you will not taste the beetroot with all the other delicious toppings.
- If you don't have a juicer you can use store bought cold-pressed apple juice. The flavour will be amazing but the colour will not be pink, which is kind of the fun part.
- Substitute coconut yoghurt for vanilla dairy yoghurt if you prefer.
- Roasted macadamia butter is easy to make but can be purchased from gourmet food shops.
- Sub almond crumble for a toasted muesli, granola or any other butty crumble you want to make or have on hand.
