This delicious peanut butter & maple granola was a complete accident... yep, one day when making the dark chocolate granola bar for the cafe (see "dark chocolate granola bar"), we got too busy to finish the slice and the mixture got put in the fridge. It became too firm to then press into a slice and couldn't be used, but we didn't want it to go to waste. I had the idea to toast the mixture into a granola and the result, was 10/10. The texture was a little heavy for an everyday granola, but we loved it so much that we made a few tweaks to lighten it up for everyday eating. So delicious I almost always go back for a second bowl.
200g rolled oats
135g of cashews
55g brown rice puffs
85g dates roughly chopped into smaller pieces
60g pepitas
40g almond flakes
125ml maple
125ml roasted smooth peanut butter
1tsp vanilla
4tbs coconut oil
pinch sea salt
1. Lightly toast the cashews, oats and brown rice puffs in separate trays until each are a little crispy (this helps with texture), and when done pre heat the oven to 180°c. Line a large baking tray with baking paper
2. In a small saucepan, melt the maple, peanut butter, vanilla and coconut oil over a low heat and whisk to combine.
3. In a large bowl, combine the oats, cashews, puffs, chopped dates, pepitas, sea salt and crush the almond flakes in with your hand.
4. Pour in the whisked wet ingredients and mix well with a wooden spoon.
5. Pour mixture into lined baking tray and evenly spread. Bake for 20 - 30 minutes stirring occasionally until golden and crispy, it's okay if it is still soft as it will harden when cooled. When cool, transfer to a airtight container or jar, will keep from 2 weeks up to a month, but we think you will eat it all before then. Serve topped with coconut yogurt, a splash of nut milk, fresh fruit or stew up some frozen raspberries.

- Swap out the cashews, seeds and dried fruit with any other alternative you have on hand.
- Use a pure peanut butter made from 100 per cent nuts to ensure you’re not getting unexpected added sugar.
- Swap out peanut and maple for honey and tahini.
