Raw|Vegan|Gluten-free|Natural Sugars
This raw vegan lemon slice is so, so, so YUM and was an absolute staple in the cafe. So soft, creamy, tart and delish. Super quick and easy to make if you have a food processor.
Recipe inspired by Whole Food Simply lemon macadamia slice.
Base:
1 cup pitted dry dates or 12 medjool dates
2 + 1/2 cups desiccated coconut
1 tbs nut butter
1 tbs melted coconut oil
pinch of salt
Topping:
2 cups raw macadamias
1/3 cup maple
zest & juice of one lemon
3 tbs melted coconut oil
2 tsp vanilla
1. Grease with coconut oil and line a 20cm square tin with baking paper, with excess hanging over the sides for easy removal.
2. Place all the base ingredients in a food processor and blend until the mixture resembles a sticky crumble. To test, press mixture down with the back of a spoon, if not sticky enough blend more. Press the mixture firmly into the base of prepared tin and place in the fridge to set. Wipe food processor bowl clean for next step.
3. Place the macadamias into your processor and blend until they form a smooth paste, scrape the sides as you go. Add in the remaining ingredients and blend until the mixture is smooth and becomes thicker in texture. Pour the mixture over the base and level the top with a spatula. Place in the fridge to set overnight.
4. Remove from the tin by pulling the sides of the paper up. Slice into squares or bars and store in an airtight container in the fridge.
R E C I P E N O T E S
- Substitute macadamias for cashews.
- Melt coconut oil on a low heat prior to making, this will help the slice set properly.
- Nut butter can be any mild variety like almond, cashew, or macadamia. We do not recommend peanut.
- When making the base, make sure you continue to blend ingredients together until the mixture is sticky. Not blending enough will leave the base crumbly. Make sure you compact the base by pressing firmly down.
- When making the topping, blend the macadamias until as smooth as possible this helps the topping set and become stable.
- If using a larger tine, we recommend multiplying the base by 1.5x
