Grilled Peach + Haloumi Salad

Gluten free Have you ever bbq'd fruit? I have, many times and if you are curious, then the one thing you must try this summer is this grilled peach and haloumi salad. It's basically a three-ingredient salad that seems kind of bougie but is so seriously easy and delicious you'll be kicking yourself if you don't make it effective immediately and hard launch this salad at Christmas time. The juicy caramelised peaches and the chewy salty haloumi is all that is really needed but we jazzed it up with some basil leaves, pepper, and a sprinkle of our dukkah for that bougie vibe.

4 yellow peaches 200g (1 pack) haloumi handful basil leaves
cracked pepper olive oil
Optional: Dukkah

1. Preheat the bbq. Slice the peaches in half, remove the seed and cut into quarters. Slice the haloumi into 1cm thick lengths.

2. Drizzle the peaches and haloumi with olive oil and grill on the bbq until a slight charred and the peaches have caramelised.

3. Serve as a single later on a plate or salad bowl with basil leaves, cracked pepper and a sprinkle of dukkah.
