A popular toast from our cafe menu. Surprisingly simple, fresh and satiating. Combing the healthy fats of fresh olive oil, avocado, and tangy sauerkraut on top of crunchy toast is a match made in heaven. Enjoy cafe-style brekkie/lunch at home with this simple toast.
2 slices sourdough or rye
2 tsp butter
handful mixed leaves
1 avocado sliced
2 tsp red wine vinegar * apple cider vinegar or balsamic
pinch of mixed herbs *oregano, sage, rosemary, thyme
pinch of salt and pepper
1 tbs sauerkraut
2 tsp garlic oil * or lemon oil
1 tbs dukkah
1. Place the mixed leaves, avocado, vinegar, mixed herbs and the salt and pepper in a bowl, and use tongs to mix well until well combined.
2. Toast the sourdough until golden and spread with butter.
3. Spread the avocado salad mixture on the toast and use the back of a fork to flatten, then drizzle with garlic oil. Top with sauerkraut and a sprinkle of dukkah.
Option:
For an extra delight, spread ricotta on the toast or grill some haloumi to go with!

- Substitute red wine vinegar for apple cider vinegar, balsamic or leftover pickled onion brine.
